8 pound prime rib. Nothing fancy, just sea salt, pepper, and rosemary rubbed roast. Light coating of olive oil. On the Big Steel Keg at 250 degrees for 4 hours. Perfection for the holiday.

Allow to rest for 20 minutes in foil. Put on the cutting board:

ReplyDeleteThat prime rib does look delicious. Sea salt, black pepper, and rosemary, eh? I assume you used fresh ground pepper. That is is the best, you know.
My brother sent me some strange salts, with names like Black Lava Salt, Alaea Sea Salt, and Fluer de Les. They're from Hawaii and are supposed to good for steaks, fish, and salads. Doesn't say anything about pork though.
I usually use Kosher salt on steaks, especially filet mignon, with pepper, rosemary and sage. Makes for a good rub. But I like Lawry's seasoning salt and lemon pepper a lot. You can make just about anything, beef, chicken, pork, taste good with that and some Worcestershire sauce.
For fried chicken, I use whole wheat flour, a palm of salt and two palms of lemon pepper. For fried fish, yellow corn meal, salt and lemon pepper. For broiled fish, though, like the red snapper filets we're having tonight, I use blackened seasoning salt and lemon pepper, and a dash of curry.

Merry Christmas and good eating! We did up a Christmas lamb with mashed potatoes, red cabbage and not-in-season veggies like cauliflower and broccoli. A California red wine was also seen at the table.
