Beef Ribs for Dinner

I did my first true BBQ attempt today on my favorite item for low and slow cooking....Beef Ribs!

I am still a newbie on the new grill and had no experience with charcoal until I bought this grill so I was a little scared I would mess this up. I think it came out pretty good!

    Those look pretty damn good, GYC. But they'll be even better next time, as you become more accustomed to your grill.

    The thing about grilling is this. The more you grill, the better you become. It's all about practice and patience. Same with anything else, I suppose, but especially true when it comes to grilling.

    2 questions.

    1. Is that cooker big enough for indirect (i.e. low & slow) cooking? It looks like you placed them at the center of the grate (direct cooking).

    2. Why beef ribs instead of pork? Beef ribs are is great for korean style BBQ, and beef brisket is tops for texas style BBQ, all the best BBQ I have ever had in TN, AL & NC is always pork.

    1-the Big Steel Keg is pretty large; the picture above on the grill was at the end after I removed the heat diffuser and drip pan; Indirect cooking is no problem

    2-I love beef ribs, just my own preference.

    They look good, what did you rub them with?

    Try rubbing them down with brown sugar and nutmeg after patting in some meat tenderizer, and then wrap them in plastic wrap and put in the fridge for 24 hours allowing them to draw their own juices before you grill them...

    I got a killer way to do a ham with Southern Comfort also...

    The mighty swine may rule in some parts of the country, but beef is still King.
